Process of manufacture of maple-syrup



Every spring the trees are tapped and buckets hung to collect the first sweet drops of maple sap.
Everyday all the buckets must be emptied and the sap hauled to the sugar house for evaporation.


This evaporation process is done in large flat pans which have a fire constantly roaring under them. The collecting and boiling down process is a high labor and energy intensive process and therefore very expensive.
The sap starts out with the same consistency as water, as the steam is driven off the sap eventually thickens and becomes syrup.


Government approved specialists sample every batch of our pure maple syrup and certify that our syrup is 100% pure and free from adulteration. Bottles are visually checked, then given a code to indicate their batch, best before date and origin.
